Vegan Air-Fried Tofu with Vegetables and Rice
Ingredients
- Basmati rice
- Mushrooms
- Avocado
- Asparagus
- Tofu
Tofu sauce
- 2 tablespoons tamari
- 2 tablespoons rice vinegar
- 3 tablespoons water
- 1 teaspoon corn starch
Preparation
Cook basmati rice according to package instructions.
Sauté mushrooms in tamari until tender.
Steam or sauté asparagus until slightly softened.
Cook tofu in an air fryer at 200°C for 5 minutes.
In a non-stick frying pan, combine tofu with 2 tablespoons tamari, 2 tablespoons rice vinegar, 3 tablespoons water, and 1 teaspoon corn starch.
Cook the mixture on low-medium heat for 2-3 minutes until the sauce thickens.
Assemble the dish by combining rice, mushrooms, asparagus, and tofu mixture, and top with sliced avocado.
