Easy Vegan Tofu Rice Bowl
Ingredients
- Basmati rice
- Mushrooms
- Avocado
- Asparagus
- Tofu
Tofu sauce
- 2 tablespoons tamari
- 2 tablespoons rice vinegar
- 3 tablespoons water
- 1 teaspoon cornstarch
Preparation
Cook basmati rice according to package instructions.
Sauté mushrooms in tamari until tender.
Cook tofu in an air fryer at 200°C/390°F for 5 minutes.
Transfer tofu to a non-stick frying pan, add tamari, rice vinegar, water, and cornstarch, and cook on low-medium heat for 2-3 minutes until the sauce thickens.
Prepare asparagus by steaming or sautéing until tender.
Slice avocado and assemble all components together.
Serve immediately.
