Easy Vegan Tofu Rice Bowl

Ingredients

  • Basmati rice
  • Mushrooms
  • Avocado
  • Asparagus
  • Tofu

Tofu sauce

  • 2 tablespoons tamari
  • 2 tablespoons rice vinegar
  • 3 tablespoons water
  • 1 teaspoon cornstarch

Preparation

  1. Cook basmati rice according to package instructions.

  2. Sauté mushrooms in tamari until tender.

  3. Cook tofu in an air fryer at 200°C/390°F for 5 minutes.

  4. Transfer tofu to a non-stick frying pan, add tamari, rice vinegar, water, and cornstarch, and cook on low-medium heat for 2-3 minutes until the sauce thickens.

  5. Prepare asparagus by steaming or sautéing until tender.

  6. Slice avocado and assemble all components together.

  7. Serve immediately.
