Easy Vegan Tofu Dinner Bowl
Ingredients
- tofu
- asparagus
- mushrooms
- rice
- avocado
Tofu sauce
- 2 tablespoons tamari
- 2 tablespoons rice vinegar
- 3 tablespoons water
- 1 teaspoon cornstarch
Preparation
Cook tofu in an air fryer at 200°C/390°F for about 5 minutes.
Add tofu to a non-stick frying pan with 2 tablespoons tamari, 2 tablespoons rice vinegar, 3 tablespoons water, and 1 teaspoon cornstarch.
Cook on low-medium heat for 2-3 minutes until the sauce thickens.
Cook rice according to package instructions or preferred method.
Prepare asparagus by steaming, sautéing, or roasting until tender.
Cook mushrooms, for example by sautéing with tamari or other seasonings until done.
Slice avocado and assemble all components into a bowl for serving.
