Easy Vegan Tofu Dinner Bowl

Ingredients

  • Tofu
  • Asparagus
  • Mushrooms
  • Rice
  • Avocado
  • 2 tablespoons tamari
  • 2 tablespoons rice vinegar
  • 3 tablespoons water
  • 1 teaspoon corn starch

Preparation

  1. Cook tofu in an air fryer at 200°C/390°F for about 5 minutes

  2. Add tofu to a non-stick frying pan with 2 tablespoons tamari, 2 tablespoons rice vinegar, 3 tablespoons water, and 1 teaspoon corn starch

  3. Cook on low-medium heat for 2-3 minutes until the sauce thickens

  4. Cook rice according to package instructions or preferred method

  5. Sauté mushrooms with tamari until tender

  6. Steam or sauté asparagus until slightly softened

  7. Slice avocado

  8. Assemble all components in a bowl and serve
