Vegan Marinated Tofu Bowl

Ingredients

  • 2/3 cup coconut aminos
  • 1/3 cup rice vinegar
  • 1/4 cup sesame oil
  • 2 garlic cloves, minced
  • 1.5 to 2 inches ginger, minced
  • Tofu
  • Broccoli
  • Green beans
  • Rice
  • Red pepper flakes (optional)
  • Cornstarch (optional)

Preparation

  1. Press tofu to remove water for 15-20 minutes.

  2. Place marinade ingredients in a large plastic bag.

  3. Cut tofu into cubes and marinate in the bag for a few hours.

  4. Blanch broccoli and green beans, then place in an ice bath to stop cooking.

  5. Air fry tofu at 375 degrees Fahrenheit for 11-12 minutes, flipping halfway through. Alternatively, bake or pan fry, and set aside once done.

  6. Heat the leftover marinade in a pan. If desired, add cornstarch to thicken.

  7. Once warm, add vegetables and tofu, stir to combine, and heat through. Add red pepper flakes if desired.

  8. Assemble the bowl with rice and vegetables.
