Simple Vegan Oat Tortillas
Ingredients
- 2 cups rolled oats
- 1.5 to 2.5 cups water
- 1/2 teaspoon salt
- 1 tablespoon nutritional yeast
Preparation
Add all ingredients to a bowl and allow the oats to soak for five minutes.
Transfer to a high-speed blender and combine until smooth. Adjust water content as needed to achieve a batter slightly more watery than pancake batter.
Heat oil or vegan butter in a non-stick pan over medium heat. Using 1/4 cup of batter at a time, drizzle into the pan in a circular shape and flip once bubbling on top.
Tips
Blending 2 cups oats with 1 to 1.5 cups water creates a perfect gluten-free tortilla batter.
Top with crushed avocado, tomato, sweet and sour tofu, and hoisin sauce for a delicious meal.
