Gluten-Free Two-Ingredient Oat Tortillas

Ingredients

  • 2 cups rolled oats
  • 1.5 to 2.5 cups water
  • 1/2 teaspoon salt
  • 1 tablespoon nutritional yeast

Preparation

  1. Add all ingredients to a bowl and allow the oats to soak for five minutes.

  2. Transfer to a high-speed blender and combine until smooth. Adjust water content as needed to achieve a batter slightly more watery than pancake batter.

  3. Heat oil or vegan butter in a non-stick pan over medium heat. Use 1/4 cup of batter at a time to form circular shapes, flipping once bubbling on top.

Tips

  1. You can add salt and nutritional yeast for a more savory wrap.

  2. Try topping with crushed avocado, tomato, sweet and sour tofu, and hoisin sauce for a delicious meal.
