Easy Healthy Vegan Banana Pancakes
Ingredients
- 1 (100g) banana
- 50g self-raising flour (gf if required)
- A squeeze of lemon juice
- 1/2 tsp baking powder (gf if required)
- 50ml milk (I use soya)
- A splash of water (depending on thickness)
Preparation
Chop the banana and microwave for 1 minute until mushy.
Put all ingredients into a bowl and mix until smooth.
Heat coconut oil or cooking spray in a pan and fry the pancakes on each side for about a minute.
Top with desired toppings and serve.
Tips
Use old spotty bananas or frozen ones for better sweetness and natural juice when microwaved.
Serve with maple syrup, dairy-free yoghurt, grapes, and clementine, or customize as preferred.
