Single Serve Raspberry Baked Oats

Ingredients

  • 60g (2/3 cup or 2 oz) oats (gf if required)
  • 2 tbsp raspberry yoghurt @nushfoods
  • 1/2 tsp baking powder (gf if required)
  • 1 small banana
  • 3 tbsp boiling water
  • 2 tsp raspberry jam

Preparation

  1. Pre-heat your oven to 200C/ 400F/ gas mark 6.

  2. Put boiling water and oats in a bowl, and stir with a spoon so it’s combined.

  3. Leave for 5 minutes to thicken and mash the banana.

  4. Add all of the remaining ingredients (except jam) into the bowl and stir with a spoon.

  5. Pour the mixture into a small oven-proof dish lined with baking parchment or paper.

  6. Make a little hole in the middle using the handle of a spoon and pour in the jam.

  7. Bake in the oven for around 30 minutes. It should be crisp on the top and soft in the middle.

  8. Serve with a spoonful of extra raspberry yoghurt.
