Single Serve Raspberry Baked Oats
Ingredients
- 60g (2/3 cup or 2 oz) oats (gf if required)
- 2 tbsp raspberry yoghurt @nushfoods
- 1/2 tsp baking powder (gf if required)
- 1 small banana
- 3 tbsp boiling water
- 2 tsp raspberry jam
Preparation
Pre-heat your oven to 200C/ 400F/ gas mark 6.
Put boiling water and oats in a bowl, and stir with a spoon so it’s combined.
Leave for 5 minutes to thicken and mash the banana.
Add all of the remaining ingredients (except jam) into the bowl and stir with a spoon.
Pour the mixture into a small oven-proof dish lined with baking parchment or paper.
Make a little hole in the middle using the handle of a spoon and pour in the jam.
Bake in the oven for around 30 minutes. It should be crisp on the top and soft in the middle.
Serve with a spoonful of extra raspberry yoghurt.
