Squidgy Brownie Baked Oats

Ingredients

  • 50g oats, blended
  • 40g dates
  • 6 tbsp boiling water
  • 1 tbsp plain yoghurt (I use soya)
  • 1 tbsp hot chocolate powder
  • 1/2 tsp baking powder

Preparation

  1. Preheat the oven to 200°C/400°F/Gas Mark 6.

  2. Soften the dates by adding a splash of cold water and microwaving them for 2 minutes until mushy, or boil them in a saucepan on the hob.

  3. Blend the oats into a flour and mix them with the boiling water in a bowl until thick.

  4. Stir in all the other ingredients, including the mushy dates.

  5. Pour the mixture into a shallow oven-proof dish lined with baking parchment and bake for 30 minutes.

Serving suggestions

  1. Enjoy warm or cold, alone or with a spoonful of extra yoghurt. This recipe serves one.
