Squidgy Brownie Baked Oats
Ingredients
- 50g oats, blended
- 40g dates
- 6 tbsp boiling water
- 1 tbsp plain yoghurt (I use soya)
- 1 tbsp hot chocolate powder
- 1/2 tsp baking powder
Preparation
Preheat the oven to 200°C/400°F/Gas Mark 6.
Soften the dates by adding a splash of cold water and microwaving them for 2 minutes until mushy, or boil them in a saucepan on the hob.
Blend the oats into a flour and mix them with the boiling water in a bowl until thick.
Stir in all the other ingredients, including the mushy dates.
Pour the mixture into a shallow oven-proof dish lined with baking parchment and bake for 30 minutes.

Enjoy warm or cold, alone or with a spoonful of extra yoghurt. This recipe serves one.
