Healthy Banoffee Overnight Oats

Ingredients

  • 50g (1/2 cup) oats (gluten-free if required)
  • 50g mashed overripe banana (about 1/2 banana)
  • 2 tablespoons low-fat caramel or toffee yogurt, or plain or vanilla yogurt with a splash of maple syrup
  • A few chopped dates or prunes
  • Pinch of cocoa powder or drinking chocolate (optional)
  • 10 tablespoons boiling water

Preparation

  1. Put the kettle on and while waiting, mash the banana.

  2. Put boiling water and oats in a bowl and stir to combine.

  3. Leave for 5 minutes to thicken.

  4. Add all other ingredients including the mashed banana and stir with a spoon.

  5. Transfer the mixture to an empty jam jar or container with a lid.

  6. Put the lid on and refrigerate overnight or for a couple of hours.

  7. In the morning, enjoy as is or with additional yogurt, sliced banana, or maple syrup.

Tips

  1. Use an overripe banana for natural sweetness and easier mashing.
