Healthy Banoffee Overnight Oats
Ingredients
- 50g (1/2 cup) oats (gluten-free if required)
- 50g mashed overripe banana (about 1/2 banana)
- 2 tablespoons low-fat caramel or toffee yogurt, or plain or vanilla yogurt with a splash of maple syrup
- A few chopped dates or prunes
- Pinch of cocoa powder or drinking chocolate (optional)
- 10 tablespoons boiling water
Preparation
Put the kettle on and while waiting, mash the banana.
Put boiling water and oats in a bowl and stir to combine.
Leave for 5 minutes to thicken.
Add all other ingredients including the mashed banana and stir with a spoon.
Transfer the mixture to an empty jam jar or container with a lid.
Put the lid on and refrigerate overnight or for a couple of hours.
In the morning, enjoy as is or with additional yogurt, sliced banana, or maple syrup.
Tips
Use an overripe banana for natural sweetness and easier mashing.
