2-Minute Chocolate Banana Bread in a Mug
Ingredients
- 60g self-raising flour (gluten free)
- 10g cocoa powder
- 50g mashed overripe banana
- 20g softened dates
- 20g low-fat margarine
- 1 egg or vegan egg substitute
Preparation
Soften the dates by putting them in the microwave for a few seconds with some water.
Mash the banana with a fork.
Put all of the ingredients into a large mug and stir to combine.
Once you've got a smooth consistency, microwave the mug on high for 2 minutes, adjusting time based on microwave power.
Once cooked, remove from the microwave and use a sharp knife to ease the cake out of the mug.
Tip the cake onto a plate and slice it once slightly cooled.
Enjoy warm or cold.
