2-Minute Chocolate Banana Bread in a Mug

Ingredients

  • 60g self-raising flour (gluten free)
  • 10g cocoa powder
  • 50g mashed overripe banana
  • 20g softened dates
  • 20g low-fat margarine
  • 1 egg or vegan egg substitute

Preparation

  1. Soften the dates by putting them in the microwave for a few seconds with some water.

  2. Mash the banana with a fork.

  3. Put all of the ingredients into a large mug and stir to combine.

  4. Once you've got a smooth consistency, microwave the mug on high for 2 minutes, adjusting time based on microwave power.

  5. Once cooked, remove from the microwave and use a sharp knife to ease the cake out of the mug.

  6. Tip the cake onto a plate and slice it once slightly cooled.

  7. Enjoy warm or cold.
