Easy Low-Sugar Banana Bread

Ingredients

  • 100g (1/2 cup, 4oz) self-raising flour (works with gluten free flour and all purpose with 1/2 tsp baking powder)
  • 1 medium overripe banana
  • 1 egg (vegan option coming soon!)
  • 2 tbsp maple or golden syrup

Preparation

  1. Preheat your oven to 180C/350F/gas mark 4.

  2. Mash the banana in a bowl, then add flour, egg, and syrup.

  3. Stir with a spoon until combined.

  4. Line a small oven-proof dish or loaf tin with baking parchment and pour the mixture in.

  5. Oven bake for 15-20 minutes.

  6. Slice and enjoy warm.

  1. This banana bread pairs well with yoghurt and jam for a yummy breakfast.

  2. Each slice has 116 kcal and is low in sugar with no butter or oil.

  3. It can be made gluten-free and dairy-free.
