Super Quick Lemonade Bread

Ingredients

  • 50g self-raising flour (gluten-free if required)
  • 4 tablespoons low calorie lemonade
  • 3 tablespoons sweetener, sugar, or maple syrup

Preparation

  1. Pre-heat the oven to 180C/350F/gas mark 4

  2. Put everything into a bowl and mix with a spoon until combined and sticky

  3. Shape into a round-ish form and place onto an oven tray lined with baking parchment

  4. Bake in the oven for 15 minutes. Check it’s done by inserting a knife; if it comes out clean, it's ready

Notes

  1. Expect a super light and fluffy texture

  2. Sweetener can be substituted with sugar or maple syrup

  3. Lemonade can be replaced with fizzy or sparkling water

  4. Self-raising flour can be swapped with plain flour and a pinch of baking powder
