Banana Bread Chocolate Chip Muffins

Ingredients

  • 100g self-raising flour (gluten-free)
  • 50g over-ripe banana, mashed
  • 4 tbsp soda water
  • 1 tbsp maple syrup
  • 2 tbsp dark chocolate chips

Preparation

  1. Pre-heat the oven to 200C/400F/gas mark 6.

  2. Microwave the banana in a mug for 1 minute so it becomes mushy.

  3. Put everything into a bowl and mix until combined and sticky.

  4. Put the mixture into 4 muffin or cupcake cases.

  5. Oven bake for 15 minutes.

Tips

  1. Expect a super light bread-like texture.

  2. Serve warm and best eaten on the day of baking.

  3. For best results, use over-ripe bananas with spottier skin for natural sweetness.
