Banana Bread Chocolate Chip Muffins
Ingredients
- 100g self-raising flour (gluten-free)
- 50g over-ripe banana, mashed
- 4 tbsp soda water
- 1 tbsp maple syrup
- 2 tbsp dark chocolate chips
Preparation
Pre-heat the oven to 200C/400F/gas mark 6.
Microwave the banana in a mug for 1 minute so it becomes mushy.
Put everything into a bowl and mix until combined and sticky.
Put the mixture into 4 muffin or cupcake cases.
Oven bake for 15 minutes.
Tips
Expect a super light bread-like texture.
Serve warm and best eaten on the day of baking.
For best results, use over-ripe bananas with spottier skin for natural sweetness.
