Banana Bread Muffins
Ingredients
- 100g self-raising flour
- 50g overripe banana, mashed
- 1 egg (or see below for my vegan option)
- 1 heaped tbsp maple syrup/ sugar/ or sweetener
Preparation
Pre-heat the oven to 180C/ 350F/ gas mark 4
Put everything in a bowl and mix until combined and sticky
Put mixture into muffin/ cupcake cases. It will be very sticky so you may want to use two spoons
Oven bake for 15 minutes
Serve warm. Best eaten the day of baking
