Banana Bread Muffins

Ingredients

  • 100g self-raising flour
  • 50g overripe banana, mashed
  • 1 egg (or see below for my vegan option)
  • 1 heaped tbsp maple syrup/ sugar/ or sweetener

Preparation

  1. Pre-heat the oven to 180C/ 350F/ gas mark 4

  2. Put everything in a bowl and mix until combined and sticky

  3. Put mixture into muffin/ cupcake cases. It will be very sticky so you may want to use two spoons

  4. Oven bake for 15 minutes

  5. Serve warm. Best eaten the day of baking
