Easy 4-Ingredient Banana Bread

Ingredients

  • 100g (1/2 cup, 4oz) self-raising flour or all-purpose flour with 1/2 tsp baking powder (gluten-free flour works too)
  • 1 medium overripe banana
  • 1/2 can chickpea water OR 1 egg
  • 2 tbsp syrup

Preparation

  1. Preheat the oven to 180°C/350°F/gas mark 4.

  2. Drain a can of chickpeas or use 1 egg and whisk until foamy.

  3. Mash the banana in a bowl, then add the flour, syrup, and either the egg or 5 tbsp of the foamy chickpea water.

  4. Stir until well combined.

  5. Line a small oven-proof dish or loaf tin with baking parchment and pour the mixture in.

  6. Bake in the oven for 15-20 minutes.

  7. Slice and enjoy the banana bread warm on its own or with yogurt and jam.
