Soft Vegan Banana Bread
Ingredients
- 100g self-raising flour or all-purpose flour with 1/2 tsp baking powder (gluten-free option)
- 1 medium overripe banana
- 1/2 can chickpea water or 1 egg (for non-vegan)
- 2 tbsp syrup of choice
Preparation
Pre-heat your oven to 180C, 350F, or gas mark 4.
Drain a can of chickpeas and whisk the water until foamy, or whisk 1 egg.
Mash the banana in a bowl, then add flour, syrup, and 5 tablespoons of the foamy chickpea water or egg.
Stir with a spoon until combined.
Line a small oven-proof dish or loaf tin with baking parchment and pour the mixture in.
Oven bake for 15-20 minutes.
Slice and enjoy warm.
Notes
This recipe makes 5 slices with approximately 90 kcal each.
It is low in sugar, contains no butter or oil, and is dairy-free and egg-free when using chickpea water.
A gluten-free option is available by using gluten-free flour.
