Flourless Almond and Chocolate Chip Cookies
Ingredients
- 1/2 cup smooth almond butter (such as @pipandnut)
- 2 tablespoons coconut oil
- 1/2 cup brown sugar or coconut sugar
- 2 medium eggs (at room temperature)
- 1 1/2 tsp vanilla extract
- 1/2 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 1/4 tsp fine salt
- 1/2 cup coconut flour (such as @thegroovyfoodcompany)
- 1/2 cup chocolate chips (dairy-free, if preferred)
- 1/3 cup flaked almonds
- Salt (optional)
- Additional flaked almonds
Preparation
Preheat your oven to 180C and line a baking sheet with baking paper.
In a large bowl, combine almond butter, coconut oil, sugar, eggs, and vanilla using a hand blender. Mix until well combined.
Add bicarbonate of soda, cinnamon, fine salt, and coconut flour to the mixture. Blend again until a smooth dough forms. You may need to scrape down the sides of the bowl to ensure full incorporation.
Fold in the chocolate chips and flaked almonds using your hands.
Take spoonfuls of the dough, form balls, and slightly flatten them to create chunky cookies. Sprinkle with salt (if desired) and a few extra flaked almonds.
Place the cookies on the prepared baking sheet, as they don't spread much during baking.
Bake for 7-8 minutes or until the edges turn slightly golden brown. Allow the cookies to cool on the baking sheet for a couple of minutes, then transfer them to a wire rack to cool completely.
