Hemp Crispy Treats with Ganache Topping

Ingredients

Hemp Rice Crispies

  • 1 cup peanut butter
  • 7 tbsp maple syrup
  • 1 tsp vanilla
  • 2 tbsp coconut oil
  • Pinch of salt (plus more for topping)
  • 4 cups puffed rice
  • 1/4 cup hemp seeds (plus more for topping)

Ganache Top Layer

  • 1/2 cup cacao
  • 1/2 cup maple syrup
  • 2 tbsp peanut butter
  • 1 tsp vanilla
  • Pinch of salt
  • 1/4 + 2 tbsp cashew milk
  • 2 tsp coconut oil

Preparation

  1. Place parchment paper in an 8x8 pan.

  2. In a microwaveable bowl (or on the stove top), combine peanut butter, maple syrup, and coconut oil. Microwave until the mixture is melted. Add vanilla and salt, then stir well.

  3. In a large bowl, place the puffed rice. Pour the peanut butter mixture over the puffed rice and stir until well combined.

  4. Add hemp seeds to the mixture and mix thoroughly.

  5. Press the mixture firmly into the prepared pan. Place the pan in the freezer to set for 2 hours.

  6. For the ganache top layer, microwave the cacao, maple syrup, peanut butter, vanilla, salt, cashew milk, and coconut oil in a bowl. Whisk until smooth.

  7. Remove the pan from the freezer and layer the ganache onto the rice crispy treats.

  8. Sprinkle with additional hemp seeds and sea salt.

  9. Place the pan back in the freezer to set.

  10. Once set, cut into desired shapes and serve.
