Matcha Coconut Bars with Dark Chocolate Coating
Ingredients
- 2 cups unsweetened shredded coconut
- 1/4 cup coconut oil
- 1/4 cup maple syrup or honey
- 1 tsp matcha powder (my fave is @myencha)
- Pinch of salt
- 1 cup dark chocolate chips
Preparation
In a food processor, combine shredded coconut, coconut oil, maple syrup or honey, matcha powder, and a pinch of salt.
Process the mixture until it becomes sticky and holds together.
Line a pan (approximately 8x4 inches) with wax paper.
Press the sticky mixture into the lined pan, compacting it evenly.
Place the pan in the freezer and let it freeze for about 2 hours or until the mixture hardens.
Once frozen, remove the pan from the freezer and cut the hardened mixture into 8 bars (or more/smaller if desired).
Melt the dark chocolate chips using a microwave or double boiler.
Dip each bar into the melted dark chocolate, coating it completely.
Place the coated bars on a tray lined with wax paper.
Refrigerate the bars until the chocolate coating sets.
