Matcha Coconut Bars with Dark Chocolate Coating

Ingredients

  • 2 cups unsweetened shredded coconut
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup or honey
  • 1 tsp matcha powder (my fave is @myencha)
  • Pinch of salt
  • 1 cup dark chocolate chips

Preparation

  1. In a food processor, combine shredded coconut, coconut oil, maple syrup or honey, matcha powder, and a pinch of salt.

  2. Process the mixture until it becomes sticky and holds together.

  3. Line a pan (approximately 8x4 inches) with wax paper.

  4. Press the sticky mixture into the lined pan, compacting it evenly.

  5. Place the pan in the freezer and let it freeze for about 2 hours or until the mixture hardens.

  6. Once frozen, remove the pan from the freezer and cut the hardened mixture into 8 bars (or more/smaller if desired).

  7. Melt the dark chocolate chips using a microwave or double boiler.

  8. Dip each bar into the melted dark chocolate, coating it completely.

  9. Place the coated bars on a tray lined with wax paper.

  10. Refrigerate the bars until the chocolate coating sets.
