Homemade Vegan/paleo Kit Kats

Ingredients

  • 3/4 cup (75g) unsweetened shredded coconut
  • 3/4 cup (105g) almonds
  • Pinch of salt
  • 1/4 cup (65g) nut or seed butter
  • 1/4 cup (80g) maple syrup
  • 1 cup (160g) dark chocolate chips

Preparation

  1. Blend the coconut and almonds to a fine flour

  2. Melt the nut/seed butter with the maple syrup, stirring until smooth

  3. Mix into flour along with a pinch of salt to form a dough

  4. Press/roll as thin as possible on a lined baking sheet

  5. Bake for 10 minutes at 350ºF

  6. Cool for 10-15 minutes

  7. Trim edges into a rectangle, and then cut that rectangle into 3 equal sized rectangles

  8. Melt the chocolate

  9. Divide into 2 separate bowls

  10. Crush/blend the cut off edges into fine crumbs

  11. Stir into one half of the melted chocolate

  12. Layer the wafer rectangles with the crumb-filled chocolate

  13. Refrigerate about 10 minutes until it holds together

  14. Slice into 8 bars

  15. Cover with the remaining chocolate

  16. Refrigerate until set
