Vegan Paleo Kit Kat Bars
Ingredients
- 3/4 cup unsweetened shredded coconut
- 3/4 cup almonds
- Pinch of salt
- 1/4 cup nut or seed butter
- 1/4 cup maple syrup
- 1 cup dark chocolate chips
Preparation
Blend the coconut and almonds to a fine flour.
Melt the nut or seed butter with the maple syrup and stir until smooth.
Add to the flour with a pinch of salt and mix to form a dough.
Press or roll as thin as possible onto a lined baking sheet.
Bake for 10 minutes at 350ºF.
Cool for 10-15 minutes.
Cut off the edges and save them to form a rectangle.
Cut the rectangle into 3 parts.
Melt the chocolate and divide into 2 separate bowls.
Crush the cut off edges into fine crumbs.
Stir the crumbs into half of the melted chocolate.
Layer the wafer rectangles with the crumb-filled chocolate.
Refrigerate for about 10 minutes until it holds together.
Slice into 8 bars.
Cover with the remaining chocolate.
Refrigerate until set.
