Vegan Paleo Kit Kat Bars

Ingredients

  • 3/4 cup unsweetened shredded coconut
  • 3/4 cup almonds
  • Pinch of salt
  • 1/4 cup nut or seed butter
  • 1/4 cup maple syrup
  • 1 cup dark chocolate chips

Preparation

  1. Blend the coconut and almonds to a fine flour.

  2. Melt the nut or seed butter with the maple syrup and stir until smooth.

  3. Add to the flour with a pinch of salt and mix to form a dough.

  4. Press or roll as thin as possible onto a lined baking sheet.

  5. Bake for 10 minutes at 350ºF.

  6. Cool for 10-15 minutes.

  7. Cut off the edges and save them to form a rectangle.

  8. Cut the rectangle into 3 parts.

  9. Melt the chocolate and divide into 2 separate bowls.

  10. Crush the cut off edges into fine crumbs.

  11. Stir the crumbs into half of the melted chocolate.

  12. Layer the wafer rectangles with the crumb-filled chocolate.

  13. Refrigerate for about 10 minutes until it holds together.

  14. Slice into 8 bars.

  15. Cover with the remaining chocolate.

  16. Refrigerate until set.
