No-Bake Strawberry Coconut Bars

Ingredients

  • 3/4 cup (100g) fresh strawberries
  • 3/4 cup (15g) freeze dried strawberries
  • 2 tbsp (25g) coconut oil
  • 1/4 cup (60g) coconut cream (solid part from a can of coconut milk refrigerated at least 24 hours)
  • 2 tbsp (40g) maple syrup
  • Pinch of salt
  • 2 cups (140g) unsweetened shredded coconut
  • 1 cup (180g) dark chocolate chips

Preparation

  1. In a food processor, blend the strawberries, freeze dried strawberries, coconut cream, coconut oil, maple syrup, and salt.

  2. Add the unsweetened shredded coconut and blend to combine.

  3. Press the mixture into a lined loaf pan.

  4. Freeze for at least 1 hour.

  5. Carefully lift out of the pan and slice into 8 bars.

  6. Coat the bars in melted dark chocolate and sprinkle with more freeze dried strawberries.

  7. Chill until the chocolate is set.

Tips

  1. Keep leftovers in the fridge.
