Vegan Coconut Lime Cheesecake
Ingredients
Crust
- 100 g oats
- 75 g mixed nuts
- 150 g dates, soaked
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- A pinch of salt
Filling
- 600 g Creamy Original @violife_foods
- 3 tbsp arrowroot
- 120 g coconut cream
- Zest of 1 lime
- 120 ml lime juice
- 100 g maple syrup
Preparation
Put all crust ingredients in a food processor and mix until a firm dough forms.
Press the dough into the cake pan.
Put all filling ingredients in a bowl and beat until a thick and creamy mixture.
Spread the filling over the crust.
Freeze the cake for 6 hours.
Garnish with fresh fruit and serve.
