Vegan Coconut Lime Cheesecake

Ingredients

Crust

  • 100 g oats
  • 75 g mixed nuts
  • 150 g dates, soaked
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • A pinch of salt

Filling

  • 600 g Creamy Original @violife_foods
  • 3 tbsp arrowroot
  • 120 g coconut cream
  • Zest of 1 lime
  • 120 ml lime juice
  • 100 g maple syrup

Preparation

  1. Put all crust ingredients in a food processor and mix until a firm dough forms.

  2. Press the dough into the cake pan.

  3. Put all filling ingredients in a bowl and beat until a thick and creamy mixture.

  4. Spread the filling over the crust.

  5. Freeze the cake for 6 hours.

  6. Garnish with fresh fruit and serve.
