Matcha White Chocolate

Ingredients

  • 1/4 cup coconut oil
  • 1/4 cup coconut cream
  • 1/4 cup coconut milk powder
  • 2 tablespoons maple syrup
  • 1 teaspoon matcha powder
  • pinch salt

Preparation

  1. Melt matcha white chocolate ingredients

  2. Whisk until smooth

  3. Place 1/2 tablespoon in the bottom of each lined mini muffin cup

  4. Freeze for 20-30 minutes

  5. Cookie dough: 1 cup almond flour, 3 tablespoons nut/seed butter, 1/2 teaspoon pure vanilla extract, 3 tablespoons maple syrup, pinch salt, 3 tablespoons mini chocolate chips

  6. Stir together all the cookie dough ingredients

  7. Scoop a teaspoon full of cookie dough into each muffin cup leaving a small border around the edges

  8. Pour the remaining matcha white chocolate over top of the cookie dough

  9. Freeze for for at least an hour until set

  10. Eat straight from the freezer, allowing them to thaw for a few minutes before eating
