Gooey Banoffee Peanut Butter Fudge Cup

Ingredients

Base

  • 110g oat flour
  • 35g coconut oil
  • 50ml maple syrup
  • 15g cacao powder
  • pinch of salt

Middle

  • 3 spotty bananas
  • 80g peanut butter
  • pinch of salt (optional)
  • oat flour (optional, to thicken)

Topping

  • 50g chocolate
  • 1 tsp coconut cream (optional)

Preparation

  1. Mix 110g oat flour, 35g coconut oil, 50ml maple syrup, 15g cacao powder, and a pinch of salt. Flatten into a prepared tin or cupcake molds.

  2. Mash 3 spotty bananas. Add 80g peanut butter and a pinch of salt if the nut butter isn’t salted. Adjust consistency with oat flour if desired. Add on top of the base.

  3. Melt 50g chocolate. For a fudgy top, mix with 1 tsp coconut cream if desired. Allow to set or enjoy immediately.
