No Bake Cranberry Chocolate Nut Flapjacks

Ingredients

  • 180g oats
  • 2 slightly heaped tbsp coconut oil
  • 75g maple syrup
  • 1 tsp vanilla extract
  • 50g cranberries or other dried fruit
  • 50g chocolate, chopped
  • 20-30g chopped nuts
  • Peanut butter for drizzling (optional)

Preparation

  1. Melt the coconut oil in a pan.

  2. Add the oats, maple syrup, coconut oil and vanilla extract to a mixing bowl or a food processor and mix the ingredients together.

  3. Add the cranberries, chocolate and nuts and mix them in.

  4. Line a tin with some baking paper, scoop the mixture into the tin and flatten down with the back of a spoon.

  5. Optionally, drizzle with a couple of tablespoons of peanut butter and then pop in the fridge for at least two hours to set.

  6. Chop into slices and enjoy!
