No Bake Cranberry Chocolate Nut Flapjacks
Ingredients
- 180g oats
- 2 slightly heaped tbsp coconut oil
- 75g maple syrup
- 1 tsp vanilla extract
- 50g cranberries or other dried fruit
- 50g chocolate, chopped
- 20-30g chopped nuts
- Peanut butter for drizzling (optional)
Preparation
Melt the coconut oil in a pan.
Add the oats, maple syrup, coconut oil and vanilla extract to a mixing bowl or a food processor and mix the ingredients together.
Add the cranberries, chocolate and nuts and mix them in.
Line a tin with some baking paper, scoop the mixture into the tin and flatten down with the back of a spoon.
Optionally, drizzle with a couple of tablespoons of peanut butter and then pop in the fridge for at least two hours to set.
Chop into slices and enjoy!
