Cookie Dough Flapjacks Bars

Ingredients

  • 2 3/4 cups oats
  • 1/4 cup tahini
  • 4 1/2 tbsp maple syrup
  • a pinch of salt
  • 1 cup pitted dates
  • 1 tsp vanilla extract
  • 65g chocolate chips

Topping

  • 100g melted chocolate and 30g peanuts

Preparation

  1. Preheat oven to 180°C

  2. Blend the pitted dates until smooth

  3. Mix together tahini, maple syrup, vanilla extract, and salt

  4. Add oats and chocolate chips to the mixture and stir well

  5. Press the mixture firmly into a lined baking tin

  6. Bake for 20-25 minutes or until golden brown

  7. Melt the chocolate for the topping

  8. Spread the melted chocolate over the baked flapjacks and sprinkle with peanuts

  9. Allow to cool completely before cutting into bars
