Peanut Butter Chocolate Chip Energy Bites
Ingredients
- 2 cups oats
- 3/4 cup peanut butter
- 2 tablespoons coconut oil
- 3 tablespoons maple syrup
- 1/4 cup desiccated coconut
- 2 tablespoons chia seeds
- Pinch of salt
- 1/3 cup chocolate chips
- 1/4 cup chocolate protein powder
- 50g dark chocolate for drizzling (optional)
Preparation
Add coconut oil, peanut butter, maple syrup, and salt to a pan over low heat. Stir until melted, then leave to cool.
In a large bowl, mix the oats, desiccated coconut, and chia seeds.
Add the cooled liquid mixture and combine. Add water if the mixture doesn’t stick together.
Add chocolate chips and protein powder.
Roll into small round balls, place on a plate, and refrigerate.
Optional: Melt dark chocolate to drizzle on top or dip in cacao powder for extra chocolatey treat.
