No Bake Peanut Butter Bars

Ingredients

Base

  • 30g desiccated coconut
  • 60g oats
  • 80g crunchy peanut butter
  • 2 tsp coconut oil

Chocolate topping

  • 10g dark vegan chocolate
  • 15g peanut butter

Preparation

  1. Use a food processor to mix the base ingredients until the crumb sticks together; add more peanut butter if not sticky enough.

  2. Press the mixture down into a paper-lined container using a spoon.

  3. Melt the dark vegan chocolate and peanut butter together for the topping.

  4. Spread the melted mixture over the base.

  5. Optionally, add 10-15g more melted peanut butter and swirl it into the chocolate.

  6. Refrigerate for 30-60 minutes or overnight.

  7. Optionally, add dried fruit or other low FODMAP toppings like nuts or freeze-dried raspberries before refrigerating to add chewiness.

  8. The recipe makes about 4 small squares; double the ingredients if you want more.
