No Bake Peanut Butter Bars
Ingredients
Base
- 30g desiccated coconut
- 60g oats
- 80g crunchy peanut butter
- 2 tsp coconut oil
Chocolate topping
- 10g dark vegan chocolate
- 15g peanut butter
Preparation
Use a food processor to mix the base ingredients until the crumb sticks together; add more peanut butter if not sticky enough.
Press the mixture down into a paper-lined container using a spoon.
Melt the dark vegan chocolate and peanut butter together for the topping.
Spread the melted mixture over the base.
Optionally, add 10-15g more melted peanut butter and swirl it into the chocolate.
Refrigerate for 30-60 minutes or overnight.
Optionally, add dried fruit or other low FODMAP toppings like nuts or freeze-dried raspberries before refrigerating to add chewiness.
The recipe makes about 4 small squares; double the ingredients if you want more.
