Chocolate Peanut Butter Easter Egg Nests

Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1 tsp vanilla essence
  • 2 tbsp cacao powder
  • 1.5 cup oats
  • 1/4 cup desiccated coconut
  • mini eggs / any other chocolate eggs

Preparation

  1. Mix the peanut butter, maple syrup and coconut oil in a pan over a medium heat until melted and combined.

  2. Mix in the vanilla and cacao powder

  3. Add the oats and coconut until fully covered in the liquid mixture

  4. Take roughly 1tbsp portions of the mix and use your hands to roll into a ball

  5. Place the ball on a plate and make the nest shape by flattening the ball and using the back of a spoon to make the dip for the eggs

  6. Repeat with all the mixture and then put in the fridge to firm up

  7. Leave for at least 1 hour - but a few ideally- remove from the fridge and top with your choccie eggs!
