Almond Biscoff Slice

Ingredients

  • 1 tbsp maple syrup
  • 1 tbsp cacao powder
  • pinch of salt
  • 1/2 cup biscoff (vegan cookie spread), melted
  • 2 tbsp coconut oil
  • 2 tbsp chocolate, melted for drizzle

Preparation

  1. Add the almonds to a high powered blender and blend down to form a flour. Transfer to a bowl and mix with the coconut oil, maple syrup, cacao powder & salt. You can do this in the blender, I didn’t want it sticking to the bottom so I did it in a bowl

  2. Transfer to a container lined with baking paper. I used a small 10cm square container. Press it in until the top is smooth and place in the freezer for 10 to 15 mins while you prepare the next step

  3. Add the Biscoff to a bowl and melt in the microwave for about 20 seconds. Add the coconut oil and mix together. Remove container from the freezer and pour the Biscoff on top. Return to the freezer for 1 hour

  4. After 1 hour, melt the chocolate. Remove the container and pull out the slice by the baking paper. Drizzle the melted chocolate on top. Cut into desired pieces and enjoy
