No-Bake Chocolate Almond Butter Bars
Ingredients
- 2/3 cup almond flour
- 3 tbsp cacao powder
- Pinch of salt
- 3 tbsp maple syrup
- 1 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 teaspoon vanilla
- 1/4 tsp salt
- 3 oz dark chocolate, chopped
- 1 tsp coconut oil
Preparation
Line a loaf pan with parchment paper, ensuring some hangs out for easy removal of the bars.
Base Layer: In a bowl, whisk together almond flour, cacao powder, and a pinch of salt. Add maple syrup and mix with a spatula until a sticky dough forms. Transfer this mixture to the bottom of the lined loaf pan and press it down to form a flat base. Place in the freezer for 10 minutes while preparing the filling.
Almond Butter Layer: In the same bowl used for the base layer, whisk together almond butter, maple syrup, vanilla, and salt. Add the melted coconut oil and mix until well incorporated. Pour this mixture over the frozen base and use a spatula to smooth the top. Return to the freezer for another 10 minutes.
Chocolate Layer: Combine chopped dark chocolate and coconut oil in a microwave-safe bowl. Microwave for 60 seconds and continue in 30-second intervals until the mixture is completely melted and runny, stirring frequently. Pour the melted chocolate over the almond butter layer. Optionally, sprinkle a bit of sea salt on top. Freeze for at least 30 minutes or until hardened.
Once the bars are firm, remove them from the loaf pan using the parchment paper. Slice into bars (recipe suggests 18, but you can cut larger pieces). Note that these bars can soften at room temperature, so consider storing them in the freezer for a creamy dessert treat.
