Two-Ingredient Banana Bread Granola

Ingredients

  • 100g or 1 1/4 cup any oats (use gf if required)
  • 1 medium overripe banana

Serving suggestions

  • Yoghurt for serving, such as coconut collab

Preparation

  1. Pre-heat oven to 200C, 400F, or gas mark 6.

  2. Peel and mash the banana with a fork in a bowl. The riper the banana, the better as it is softer to mash and naturally sweeter.

  3. Add the oats and mix together to form clumps.

  4. Transfer to a shallow baking tray and even out the clumps to a crumble consistency.

  5. Oven bake for 20 minutes.

  6. Remove from oven, shake the tray, and use a fork or spoon to crumble the oats.

  7. Return to oven for another 25 minutes.

  8. Eat as is for a healthy snack or serve with yoghurt for a filling breakfast.
