Two-Ingredient Banana Bread Granola
Ingredients
- 100g or 1 1/4 cup any oats (use gf if required)
- 1 medium overripe banana
Serving suggestions
- Yoghurt for serving, such as coconut collab
Preparation
Pre-heat oven to 200C, 400F, or gas mark 6.
Peel and mash the banana with a fork in a bowl. The riper the banana, the better as it is softer to mash and naturally sweeter.
Add the oats and mix together to form clumps.
Transfer to a shallow baking tray and even out the clumps to a crumble consistency.
Oven bake for 20 minutes.
Remove from oven, shake the tray, and use a fork or spoon to crumble the oats.
Return to oven for another 25 minutes.
Eat as is for a healthy snack or serve with yoghurt for a filling breakfast.
