S'mores Baked Oats Cookies

Ingredients

  • 75g oats (to be blended)
  • 1 tablespoon oats
  • 75g plain yogurt (soya-based)
  • 2 chunks dark chocolate
  • 2 marshmallows

Preparation

  1. Preheat the oven to 200°C, 400°F, or Gas Mark 6.

  2. Mix the blended oats and yogurt together in a bowl with a spoon until it clumps together.

  3. Sprinkle the extra tablespoon of oats over the mixture to make it less sticky when dividing.

  4. Divide the mixture into two portions, roll each into a ball, and use your thumb to make a dent in each.

  5. Fill each dent with a piece of chocolate and a marshmallow.

  6. Place on a baking tray and bake for 15-20 minutes, ensuring the marshmallow does not burn.

  7. Enjoy the s'mores baked oats.
