S'mores Baked Oats Cookies
Ingredients
- 75g oats (to be blended)
- 1 tablespoon oats
- 75g plain yogurt (soya-based)
- 2 chunks dark chocolate
- 2 marshmallows
Preparation
Preheat the oven to 200°C, 400°F, or Gas Mark 6.
Mix the blended oats and yogurt together in a bowl with a spoon until it clumps together.
Sprinkle the extra tablespoon of oats over the mixture to make it less sticky when dividing.
Divide the mixture into two portions, roll each into a ball, and use your thumb to make a dent in each.
Fill each dent with a piece of chocolate and a marshmallow.
Place on a baking tray and bake for 15-20 minutes, ensuring the marshmallow does not burn.
