Healthy Blackberry Baked Oats

Ingredients

  • 50g (1/2 cup) oats
  • 2 tbsp plain or vanilla yoghurt (I use soya)
  • 2 handfuls blackberries (or any fruit)
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 2 tbsp sweetener
  • 3 tbsp hot water

Preparation

  1. Preheat oven to 200C/400F/gas mark 6.

  2. Put hot water and oats in a bowl and stir to thicken slightly.

  3. Add all of the other ingredients and mix.

  4. Pour into a shallow oven-proof dish lined with baking parchment and bake for 25 minutes.

  5. Serve warm on its own or with extra yoghurt and maple syrup.
