Apple Crisp Baked Oats

Ingredients

  • 50g (1/2 cup) oats
  • 1/2 apple, chopped, peeled and cooked
  • 2 tbsp any yoghurt
  • 1 tbsp sultanas
  • 1 tbsp sweetener
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 3 tbsp hot water

Topping

  • 1 oat biscuit, crushed or 1 tbsp granola
  • extra yoghurt to serve

Preparation

  1. Pre-heat oven to 200°C/400°F/Gas Mark 6.

  2. Put oats and hot water into a bowl, stir and leave to thicken for a couple of minutes.

  3. Stir in all of the other ingredients until combined.

  4. Pour mixture into a shallow oven-proof dish lined with baking parchment and bake for 35-40 minutes.

  5. Enjoy for breakfast, snack or dessert with optional toppings.

Tips

  1. When doubling the quantity for meal prep, leave in the oven a bit longer.

  2. If saving for the next day or two, heat up in the microwave for a minute if you want it warm.
