Apple Pie Baked Oats

Ingredients

  • 50g oats
  • 50g apple, chopped, peeled & cooked
  • 50g any yoghurt (I use vanilla soya)
  • 1 tbsp sultanas
  • 1 tbsp sweetener
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 3 tbsp hot water

Preparation

  1. Put oats and hot water into a bowl, stir and leave to thicken for a couple of minutes.

  2. Add in all of the other ingredients and stir, making sure you cook the apple first so it is soft.

  3. Pour mixture into a shallow oven-proof dish lined with baking parchment and bake in the oven for 30 minutes on 180°C/350°F/gas mark 4.

  4. Cut into slices and enjoy for breakfast, snack or dessert. Keep in the fridge and you can freeze it too.
