Apple Pie Baked Oats
Ingredients
- 60g (2/3 cup) any oats (gf if required)
- 2 tbsp cooked apple or apple sauce/purée from a jar
- 2 tbsp any yoghurt (I use vanilla soya)
- 1 tbsp sultanas
- 1 tbsp syrup or sweetener
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 3 tbsp hot water
Preparation
Pre-heat oven to 200C/ 400F/ Gas Mark 6.
Put oats and hot water into a bowl, stir and leave to thicken for a couple of minutes.
Stir in all of the other ingredients until combined. Make sure you cook the apple first so it is soft. If you use purée from a jar, omit sweetener or syrup.
Pour mixture into a shallow oven-proof dish lined with baking parchment or paper and bake in the oven for 35-40 minutes.
Tips
Enjoy for breakfast, snack or dessert with additional yoghurt and fruit.
When doubling the quantity for meal prep, leave in the oven a bit longer.
If saving for the next day or two, heat up in the microwave for a minute if desired.
