Apple Pie Baked Oats

Ingredients

  • 60g (2/3 cup) any oats (gf if required)
  • 2 tbsp cooked apple or apple sauce/purée from a jar
  • 2 tbsp any yoghurt (I use vanilla soya)
  • 1 tbsp sultanas
  • 1 tbsp syrup or sweetener
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 3 tbsp hot water

Preparation

  1. Pre-heat oven to 200C/ 400F/ Gas Mark 6.

  2. Put oats and hot water into a bowl, stir and leave to thicken for a couple of minutes.

  3. Stir in all of the other ingredients until combined. Make sure you cook the apple first so it is soft. If you use purée from a jar, omit sweetener or syrup.

  4. Pour mixture into a shallow oven-proof dish lined with baking parchment or paper and bake in the oven for 35-40 minutes.

Tips

  1. Enjoy for breakfast, snack or dessert with additional yoghurt and fruit.

  2. When doubling the quantity for meal prep, leave in the oven a bit longer.

  3. If saving for the next day or two, heat up in the microwave for a minute if desired.
