Squidgy Blueberry and Banana Baked Oats

Ingredients

  • 60g (2/3 cup) any oats
  • 1/2 mashed banana
  • Handful blueberries
  • 2 tbsp any yogurt
  • 3 tbsp boiling water
  • 1 tbsp sweetener or syrup
  • 1/2 tsp baking powder

Toppings

  • syrup
  • yogurt

Preparation

  1. Preheat oven to 180C/350F/gas mark 4.

  2. Add boiling water to oats in a bowl, stir and leave for 5 minutes to thicken.

  3. Add all of the other ingredients to the bowl and stir to combine.

  4. Pour mixture into a shallow oven-proof dish lined with baking parchment and bake for 30 minutes.

  5. Serve warm or cold.

Tips

  1. For meal prep, triple the ingredients and bake for 50 minutes. You can also wrap and freeze it.

  2. To keep it vegan, use dairy-free yogurt.

  3. To keep it gluten-free, use gluten-free oats and baking powder.
