Lemon and Blueberry Overnight Oats
Ingredients
- 60g (2/3 cup) oats (gf if required)
- 10 tbsp boiling water
- 2 tbsp any low fat yoghurt (I use soya)
- 2 handfuls blueberries
- 1 tsp lemon extract
- Squeeze of lemon juice
- 1 tbsp sweetener (I use stevia)
Preparation
Pour the oats and boiling water into a bowl, stir, then leave for five minutes so it thickens.
Once thickened, stir in all the other ingredients.
Once combined, pour into an empty jar or container with a lid.
Put the lid on and leave in the fridge overnight.
The next morning, take it out of the fridge and enjoy as it is or with a drizzle of milk.
Tips
Both fresh and frozen blueberries work well in this recipe, but if you prefer a different type of berry such as strawberries or raspberries, simply use them instead.
