Lemon and Blueberry Overnight Oats

Ingredients

  • 60g (2/3 cup) oats (gf if required)
  • 10 tbsp boiling water
  • 2 tbsp any low fat yoghurt (I use soya)
  • 2 handfuls blueberries
  • 1 tsp lemon extract
  • Squeeze of lemon juice
  • 1 tbsp sweetener (I use stevia)

Preparation

  1. Pour the oats and boiling water into a bowl, stir, then leave for five minutes so it thickens.

  2. Once thickened, stir in all the other ingredients.

  3. Once combined, pour into an empty jar or container with a lid.

  4. Put the lid on and leave in the fridge overnight.

  5. The next morning, take it out of the fridge and enjoy as it is or with a drizzle of milk.

Tips

  1. Both fresh and frozen blueberries work well in this recipe, but if you prefer a different type of berry such as strawberries or raspberries, simply use them instead.
