Banana Bread Chia Oats with Compote and Whipped Coffee

Ingredients

  • 1 mashed banana
  • 2 tablespoons chia seeds
  • 3/4 cup plant-based milk (for chia)
  • 1/2 cup oats
  • 1 cup plant-based milk (for oats)
  • 1/4 cup maple syrup
  • 3 tablespoons coconut-based yoghurt
  • Granola (optional)
  • Fresh fruits (optional)
  • Jam (optional)

Blueberry compote

  • 1 cup blueberries (fresh or frozen)
  • Maple syrup (to taste)

Whipped dalgona coffee

  • 2 tablespoons sugar
  • 2 tablespoons instant coffee
  • 2 tablespoons boiling water

Preparation

  1. Soak the chia seeds and oats in their respective milks for at least an hour or overnight in the fridge.

  2. Mix the mashed banana, chia mixture, oat mixture, maple syrup, and yoghurt together.

  3. In a jar, layer the blueberry compote at the bottom, add the mixed ingredients, and top with more yoghurt and compote.

  4. Add a dollop of whipped dalgona coffee on top.

  5. Serve and enjoy.

Blueberry compote

  1. Simmer the blueberries in a small pot on low heat for 10 minutes, add a little maple syrup, then remove from heat and let cool.

Whipped dalgona coffee

  1. Combine sugar, instant coffee, and boiling water, then blend until frothy.

Tips

  1. For best results, prepare the chia and oats mixture overnight.

  2. Feel free to add optional toppings like granola, fresh fruits, or extra jam for customization.
