Banana and Custard Baked Oats

Ingredients

  • 50g oats
  • 50g banana
  • 2 tbsp custard
  • 3 tbsp boiling water
  • 1 tbsp syrup
  • 1/2 tsp baking powder

Preparation

  1. Preheat oven to 180C/350F/gas mark 4.

  2. Add boiling water to oats in a bowl, stir to thicken, and leave for 5 minutes.

  3. Meanwhile, mash the banana, add all ingredients to the bowl, and stir to combine.

  4. Pour mixture into a shallow oven-proof dish lined with baking parchment and bake for 30 minutes.

  5. Serve warm with a drizzle of maple syrup and extra custard if desired.

Tips

  1. Triple the ingredients for meal prep and make a big batch, which can also be frozen.
