Bakewell Inspired Oat Bake

Ingredients

  • 100g (1 cup) oats
  • 4 tbsp low-fat vanilla yoghurt
  • 2 handfuls raspberries or cherries, fresh or frozen
  • 1 tsp baking powder
  • 2 tsp almond essence or extract
  • 8 tbsp boiling water

Optional

  • 1 tbsp flaked almonds

Preparation

  1. Pre-heat the oven to 200C/400F/gas mark 6.

  2. Put boiling water and oats in a bowl and stir to thicken slightly.

  3. Leave for a couple of minutes.

  4. Add all of the other ingredients except the fruit into the bowl and stir.

  5. Pour the mixture into a shallow oven-proof dish lined with baking parchment, then press the berries into the middle.

  6. Bake in the oven for around 40-45 minutes.

Serving suggestions

  1. Serve on its own or with additional yoghurt.

  2. It can be eaten straight away or the following day cold or warmed up.
