Bakewell Inspired Oat Bake
Ingredients
- 100g (1 cup) oats
- 4 tbsp low-fat vanilla yoghurt
- 2 handfuls raspberries or cherries, fresh or frozen
- 1 tsp baking powder
- 2 tsp almond essence or extract
- 8 tbsp boiling water
Optional
- 1 tbsp flaked almonds
Preparation
Pre-heat the oven to 200C/400F/gas mark 6.
Put boiling water and oats in a bowl and stir to thicken slightly.
Leave for a couple of minutes.
Add all of the other ingredients except the fruit into the bowl and stir.
Pour the mixture into a shallow oven-proof dish lined with baking parchment, then press the berries into the middle.
Bake in the oven for around 40-45 minutes.
Serving suggestions
Serve on its own or with additional yoghurt.
It can be eaten straight away or the following day cold or warmed up.
