Chocolate Chip Walnut Muffins

Ingredients

  • 1 cup almond flour
  • 1/3 cup oat flour
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1/4 cup room temperature coconut oil
  • 2 tbsp peanut butter
  • 1/4 cup maple syrup
  • 1/3 cup unsweetened vanilla almond milk
  • 3/4 cup walnut pieces
  • 1/2 cup vegan chocolate chips

Preparation

  1. In a bowl, mix the almond flour, oat flour, baking powder, apple cider vinegar, coconut oil, peanut butter, maple syrup, and almond milk.

  2. Fold in the walnut pieces and vegan chocolate chips.

  3. Place the batter into parchment paper muffin cups.

  4. Bake at 350 degrees Fahrenheit for 30 minutes.

  5. Allow the muffins to cool before enjoying.

Notes

  1. This recipe makes about 8 medium-large muffins.
