Banana and Chocolate Baked Oats

Ingredients

  • 50g (1/2 cup) oats (gf if required)
  • 2 tbsp plain or vanilla yoghurt (I used soya)
  • 1/2 banana
  • 2 chunks of chocolate (I used @pureheavenlychocolate)
  • 1/2 tsp baking powder (gf if required)
  • 2 tbsp sweetener
  • 4 tbsp hot water

Preparation

  1. Pre-heat oven to 180C/ 350F/ gas mark 4.

  2. Boil the kettle then pour hot water over oats in a bowl.

  3. Stir then leave for 5 minutes to thicken.

  4. Mash banana with a fork then add all of the remaining ingredients into the bowl and mix.

  5. Spoon mixture into a shallow oven-proof dish, ramekin, or baking cup lined with baking parchment and bake for 30 minutes.

  6. Serve warm with custard. Use a dairy-free custard if preferred.

Tips

  1. This recipe is gluten-free and vegan when using appropriate ingredients.

  2. Can be served as a breakfast or dessert option.
