Vegan Kale Crepe with Spicy Sweet Potato Filling

Ingredients

  • 2 sweet potatoes
  • 2 cloves garlic
  • 1/3 teaspoon cumin
  • salt
  • white pepper
  • 1 white onion
  • 2 tablespoons oil

Preparation

  1. Fry the onion in oil until golden.

  2. Smash the sweet potatoes with a fork.

  3. Add all ingredients to a bowl and mix until smooth.

  4. Fill the crepes with the mixture.

  5. Serve with fresh tomatoes, avocado, hemp seeds, parsley, a little salt, and fresh ground pepper.
