Warm Spiced Bean Salad

Ingredients

  • 1 can Adzuki Beans
  • 2 tablespoons oil
  • 1 onion
  • 2-3 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon chili powder
  • 2 tomatoes
  • 1 bell pepper
  • 1-2 green chilies
  • chopped coriander
  • zest of 1 lemon
  • juice of half a lemon

Preparation

  1. Heat oil in a large pan and add the onion, garlic and salt, cook for a few minutes.

  2. Add the spices, Adzuki beans and tomatoes, cook for 2-3 minutes over moderate heat.

  3. Add the bell pepper, green chilies, coriander and cook for 1 minute.

  4. Grate the zest of one lemon and squeeze in half the juice. Serve in taco shells along with your favourite breakfast bits and enjoy!
