Easy Vegan Gluten-Free Peanut Butter Cookies

Ingredients

  • 1 cup organic peanut butter
  • 3/4 cup organic coconut or cane sugar
  • 1 teaspoon vanilla
  • 1 flax egg
  • Maldon salt to finish

Preparation

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Make flax egg by mixing 1 tablespoon ground flax with 2.5 tablespoons warm water; let sit for 5 minutes until gloopy.

  3. Beat sugar, vanilla, and flax egg together vigorously.

  4. Add peanut butter and stir until completely combined.

  5. Place mixture in fridge for 15-30 minutes.

  6. Roll into balls.

  7. Use a fork to make designs; dip fork in cold water to prevent sticking.

  8. Sprinkle with good sea salt, such as Maldon.

  9. Bake for 12 minutes.

  10. Let cool and then enjoy.
