Easy Vegan Gluten-Free Peanut Butter Cookies
Ingredients
- 1 cup organic peanut butter
- 3/4 cup organic coconut or cane sugar
- 1 teaspoon vanilla
- 1 flax egg
- Maldon salt to finish
Preparation
Preheat oven to 350 degrees Fahrenheit.
Make flax egg by mixing 1 tablespoon ground flax with 2.5 tablespoons warm water; let sit for 5 minutes until gloopy.
Beat sugar, vanilla, and flax egg together vigorously.
Add peanut butter and stir until completely combined.
Place mixture in fridge for 15-30 minutes.
Roll into balls.
Use a fork to make designs; dip fork in cold water to prevent sticking.
Sprinkle with good sea salt, such as Maldon.
Bake for 12 minutes.
Let cool and then enjoy.
